Beetroot Orange and Mint Juice

My aunt makes beetroot juice all the time, serves it at room temperature in a bowl more like beetroot water with thin slices of beetroot swimming in it that are supposed to be picked up with a fork while you drink the water with a spoon. She calls it a salad and throws in sliced cucumber as well. 

I have often debated with her why it isn't really a salad but also failed to come up with an alternative name for it.

Eating fruits somehow always makes me nostalgic. Every season, after every meal, we would sit around my mother while she meticulously peeled and chopped the fruits for us. Summer were often more labor-some for her as she sliced oranges and watermelons for a family of six. In winters though, we each would be handed a custard apple, clementine or  tangerine right after the meal.

I badly over ate on new year night. Its not how I planned it but things happened. It all ran like a movie in my head how I pushed that extra piece of chocolate cake even when I was full to the brim. Or leftover eating the next day.  It's not something I'm proud of but it was chocolate cake with coffee cream and leftover pizza?
