Two Ingredient Ice Cream (without an ice cream machine) - Cheesecake Brownie Ice cream

We all need easy desserts for days when nothing seems to go right. When all you remember about the day is a sigh. And I have been sighing a lot lately. I have ended up burning a dozen eggs this week, wore wrong socks to work and broke my favorite oil jar for instance.

And the worst part? M finds it funny. He laughed a good few minutes on my wrong socks, cracks pathetic egg jokes on my 'burned out  eggs' and says my oil jar looked hideous. Sure it spilled more than it poured but it was not hideous! Okay may be a little, but my heart aches.

When I'm sighing so much, its easiest to reach out to something sweet. While I'm trying to cut down on my sugar intake lately, to avoid eating one dessert I made another. I'm very smart that way. Well not really, I saw this incredible two ingredient ice cream on Amanda's fabulous blog I'm a baker . I had cheesecake brownies, heavy cream and condensed milk. Ice cream was made.

And what an incredible ice cream it is - creamy, sweet and rich. I almost think I would have done without an ice cream maker I bought this summer, because this has certainly become my go to ice cream recipe. The best part? You can create almost every flavor you can imagine. On my list next is nutella and roasted hazelnut ice cream. I need to get rid of nutella jar that has been staring at me with begging eyes. Ice cream will be made.

Two Ingredient Ice Cream  (without an ice cream machine) - Cheesecake Brownie Ice cream
Makes 2 liters

Ingredients 

2 cups heavy cream
1 can of condensed milk 
Cheesecake brownies *
1/2 cup chopped strawberries ** 
Pistachios to garnish

Note

* I have no idea how much cheesecake brownies I dumped into the ice cream. And I really don't think you should need a measurement on it. Just add as much as your heart wants. Plain brownies, nut brownies, cake? Anything. Here's my recipe for brownies.

** I had some strawberries around so I added those. Nothing hard and fast, add any berry you fancy or omit it all together.

Method

Whip the cream till stiff peaks are formed.

Mix rest of the ingredients with condensed milk. Lightly fold in the cream with condensed milk.

Store in an airtight 2 liters container and freeze up to 6 hours or until firm. Garnish with pistachios.

  13. You are a funny woman!! First you wear mismatched socks..then you burn dozen eggs & most of all still choose to call it a "cheesecake" brownie icecream even when they dont make their way into it ..love it..even the print on M's T-shirt or kurta?

  14. awww i can understand.. and the husbands always find ways to get some happy funny moments out of these :) I don't have an ice cream maker and that's because i don't like it ( I know i am a weirdo in this planet) but the husband loves ice cream. Should try this and surprise him ;)

  20. I did try a mango-saffron version in a similar fashion since I don't own an ice cream maker. It is simple and the results are really good.

    This one looks so lovely. Will try it when I have some leftover cake. The photos are awe-inspiring.

  39. I've only just become obsessed with condensed milk ice creams- the last one was avocado, which was different- but not nearly as appealing as this. I love it (and heavens knows the husband would too).

  47. What a fabulous recipe! The number of brownies my heart actually wants on any given day would leave little room for ice cream :) I'm looking forward to trying this quite a bit. I have an oil can that drips liberally, but I love it. Thankfully, it's metal, so no break is possible. I did recently break my vintage pressed glass juicer. Definitely made me quite sad.

  50. If making ice cream is this simple and easy, who'd ever need an ice cream machine? I guess restaurants or other eating establishments would still have use for a commercial ice cream machine since they'd have to produce an abundance. Great recipe!
